Happy Birthday to The Kind Life!
You might think I've given up on The Kind Diet. But no, not this woman! And today, to mark the one year anniversary of Alicia's blog, The Kind Life, I made the Polenta Casserole with Seitan (see picture).
Unfortunately, I couldn't find the seitan in the supermarket so I bought something called "quorn" instead, which is a mixture of mushrooms and egg whites. Not ideal since you're not suppose to eat eggs, according to Alicia, but it was the closest I could get to 'the real thing'.
I would be nice if I could say that I've been very good at following The Kind Diet but the truth is that I haven't made a single dish since going back to work a week ago. The kitchen and my children are now in the hands of my husband but I do plan to find some time at least once a week to do a vegetarian meal. On the other hand, I do pick the vegetarian option whenever visiting the restaurant at work.
