From meatballs to beanballs
My children love Swedish meatballs - those tiny round things that look more like sweets than meat and that you can find at any IKEA across the world. Anyway, I've been wanting to introduce my family to a vegetarian meal once a week and this weekend I came across a recipe that takes a new and green approach to this Swedish tradition.
Basically, I replaced the meat with white beans and added some greens (a carrot and two small onions) and herbs (rosemary and parsley) - and, of course, added some bread crumbs into the mix. My husband didn't like the smell of rosemary but he was kind enough to say that the finished result looked yummy. My biggest critics, however, are my children and they'll be served the beanballs with tomato sauce and green beans after daycare tomorrow. Wish me good luck! Until next time, live green!
